Off the parts trees and I do sub assembly's of a lot of it and paint it that way. I normally do the chassis plate and fire as one, and then most of the roll bars to the right side piece, I leave the top bars/halo/Earnhardt bar off and the rear bars that go in the trunk area separate.
That is how I have been doing the new Fusion kit .

Generally speaking I take everything off the trees before painting. Some parts I'll leave on the trees for painting if the connection point is hidden once assembled. Pending on the kit, I'll preassemble what I can and paint it as a unit. For NASCAR chassis I pretty much assemble the whole of the cage, minus the upper bars/lop and paint it. On the Fusion I just started I've even attached the suspension and plan to paint it all at once.
It will also matter what you're using to paint with. If you're using spray bombs, I wouldnt assemble too much, its harder to get into tight corners without getting too much paint on. With an airbrush you can get into tighter spots without the paint getting too thick.
